I have a pound of chicken livers. How does that compare in size to 4 chicken livers?

Modified for 2 big men:
1.Appetizer: 3 lb. tray of raw veggies (stores pre-cleaned): tomatoes, celery, cukes, & carrots. As a dip: 1,000 island dressing
2. Use 20 oz container chicken livers without hormones-- instead of 4 chicken livers for 4 people!
3. Red wine for dinner, saving 6 tablespoons for deglazing (no vinegar)
4. Ten oz. sliced mushrooms -- just rinse them.
5. Plate livers /wine sauce separately from the mushrooms /onions.
6. Half a package of Bremner wafers instead of bread

Beautiful, rich, decadent. I ended up getting my roasted chicken in the oven a tad too late, but luckily I made use of the liver and had the most simple and delicious dinner I've had in a long time. I didn't know this was a Bittman until I glanced at it again this morning, but it makes a lot of sense.
I didn't have sherry vinegar so I used rice vinegar instead, and it caramelized the onions and mushrooms perfectly.

This is quite good. Unfortunately, although I enjoyed the taste of the cooked livers, I really hated the smell of them cooking, so I will probably not make this again.
The flavor of the finished product was excellent, with a little tang from the vinegar used in the deglazing.
The technique for caramelizing the onions and cooking the mushrooms is something I will do again.

NOT 4 livers. 1 container/about 3/4 lb. I coated them with mix of flour, garlic powder, s n p.Used small onion

NOT 4!! Used 1 container ...about 12oz. I floured ( w garlic powder, s n p) livers for an extra crisp. A little dry.,.I will increase the liquid next time.I used 1/2 onion a shallot. Served with simple baby Romain with red wine vinaigrette and red onion, grain toast. Desert, grilled peaches, raspberries, whipped cream, a touch of Grand Mariner. And it’s only the 2 of us on a Thursday evening. Keeper.

Left out the mushrooms and just stirred in butter and then rosemary, cooked for a few more minutes and proceeded. Happy with the results.

Very sweet, wife loved it. Ratio of ingredients way off: I used 1 pound of mushrooms rather than 1 cup of mushrooms to 2 medium onions. Should probably have bee 2+ pounds of mushrooms, or only one onion. I used 1 pound of chicken livers: first person served received no livers in his portion. Maybe the “4 chicken livers” listed in the recipe’s ingredients should have been 4 pounds?

I used a pound of chicken livers, dusted in potato starch, and added pickled mushrooms instead of fresh. The pickled mushrooms added some texture and an additional acid offset to the rich chicken livers. Also used the pan scrapings to make a wine/stock/sherry vinegar butter reduction to sauce the dish and served over basmati rice. Delish.

You might want to cook livers in a deep fryer. Or, if you are adding vegetables, use a screen on your skillet. The livers pop hot grease a LOT! Skillet screens are inexpensive and are much better than being burned.

I substitute the sherry vinegar for any red wine or real sherry-no blood taste, and I do not bail the livers.

The secret to great chicken livers (that no one seems to know) is to boil them first. Boiling takes out the nasty blood flavor and you are left with a delicious mild flavor. BOIL YOUR LIVERS FIRST!!!

In Step 1 there is no mention of using oil to cook the onions. Should the onions be cooked without oil?
