Air fryer zucchini chips
We love using the air fryer and these zucchini chips are sure to impress. Each bite is so crispy and delicious. Plus, they are packed with flavor.
If you have children that are picky about vegetables, this recipe is a must try. The air fryer makes these golden brown and crispy.
You can make these for a snack when you are wanting something for movie night or they also make a great side dish at dinner.
Plus, zucchini is inexpensive and often on sale. It is a win all around!
Ingredients for air fryer zucchini chips:
- 2-3 small zucchini, sliced thinly
- ½ cup all-purpose flour
- 2 teaspoons paprika
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1½ cups (from 8 oz box) panko breadcrumbs
- ¼ cup finely grated parmesan cheese
- 2 eggs, beaten
How to make zucchini chips in air fryer:
Slice the zucchini into thin slices. You can use a mandolin slicer if you have one. It will gives you uniform thickness and allows even cooking.
In three separate bowls add…Flour, salt & pepper, and paprika.
Mix together Eggs, beaten.
Breadcrumbs or crushed pork rinds and parmesan cheese.
Preheat air fryer at 400F for 5 minutes.
Dip the zucchini in the flour mixture, then egg, and then the breadcrumbs and place on a baking rack.
Add a single layer of breaded zucchini chips in the bottom of the air fryer basket, spray with vegetable oil.
Fry at 400F for 6-8 minutes, flip at 4 minutes.
Cook until chips are browned and crispy.
Add any additional salt or pepper to taste.
Serve immediately. Store leftovers in refrigerator in airtight container.
Feel free to use any dipping sauce you prefer. Ranch, ketchup or anything you like. They are amazing plain with a sprinkle of sea salt.
Notes: If you want these to be keto you can coat them in pork rinds.

The air fryer gets the chips so crispy and the texture is so amazing. Just remember my trick to getting perfectly sliced zucchini is to use aveggie slicer like this one.
It is great because you can slice up a few zucchinis in just a few minutes and is much faster than doing it by hand.
AND.. they are all the same thickness so they cook the same amount of time. Each slice is uniform and the slicer makes it so quick and easy.
It really does help to have each slice the same size. The zucchini chips will cook so evenly and each one will take the same amount of cooking time.
